Ingredients

 2 1/2 oz
 Mushrooms; Drained, 1 Cn/Jar
 2 1/2 c
 Milk
 1/4 c
 Butter Or Regular Margarine
 1/4 c
 Unbleached Flour
 1/4 c
 Parmesan Cheese; Grated
 1/4 c
 Pimento; Chopped
 1 1/2 c
 Cheddar; Sharp, Shredded
 1 tsp
 Salt
 1 lb
 Fish Fillets; Cooked, Flaked
 1 dash
 Pepper
 1 
 Rice; Hot, Cooked

Instructions:

Make a white sauce with the butter, milk, flour and seasonings. Add the cheeses and stir until they are melted. Stir in the flaked fish, mushrooms and pimento and heat through. Serve over the hot rice and garnish with parsley, if desired.
